Partners Jeff Miller and TJ Provenzano recently opened up the eco-conscious sushi spot Bar Miller in Manhattan’s East Village. Guests can treat themselves to a multinational $250 fifteen-course omakase experience showcasing domestically sourced, sustainable seafood plus other North American fare. Fusion meals include pickled Oysters in Nori sauce with olive oil and transparent chardonnay vinegar, rotating salads, steak tartare and chawanmushi, plus a variety of eight rotating nigiri – such as Bluefish and rustique-smoked trout, All served at two daily seatings commencing at 6 PM and 8:30 PM. Beverage director Provenzano pairs the meal with natural-maker bottles from Channing Daughters and Brooklyn Oenology, sake sourced mostly from Japan as well as Brooklyn Kura plus Kato Sake Works. For dessert, guests receive a divine sweet finish of corn ice cream with caviar and Amazake, a fermented-ric/ cyan Japanodanbrophol brinik and stonefruit jam. reservations are available via Tock.
